Question 2. How can I display the valuation amounts in the document and in line items reports?

Answer 2. The valuation amounts from the last valuation run are available per valuation area in the line item view and in many standard reports.

The valuation amount can be viewed from the line item display (transaction FB03) of the position screen via Environment -> Valuation -> Display Values. The amounts are shown per valuation area here.

For many reports, for example, the customer line item list, you can define the valuation amount as a special field, which can then be displayed. The special field is assigned to a specific valuation area via view T044J. The special fields are specified in view V_T021S. In this view, the table BSBV and the field BWSHB* should be entered, depending on the field assigned to the valuation area (i.e. as defined in T044J). This field can then be selected for the fields available in the output list.
